What we mean by specialty coffee

Specialty coffee is graded before it is roasted. Green beans are sorted for defects, scored for flavour, roasted in small batches, and brewed to order. The point is a cup you can taste clearly, rather than a cup hidden behind sugar and syrup.

That is the coffee we serve. We keep the menu short so the coffee stays the point. A flat white here is espresso and steamed milk in a smaller cup, with the milk textured so the coffee still comes through first.
